Lettuce Leaf Tacos


Ingredients:

• 8 large lettuce leaves (romaine or butter lettuce works well)

• 1 cup cooked and seasoned ground turkey or beef (or black beans for a vegetarian option)

• 1/2 cup cherry tomatoes, halved

• 1/4 cup red onion, diced

• 1/4 cup shredded cheese (optional)

• 1 avocado, diced

• Salsa and/or Greek yogurt for topping

Instructions:

1. Wash and dry the lettuce leaves.

2. Lay out the lettuce leaves and fill each one with the ground turkey or beef (or black beans).

3. Top with cherry tomatoes, red onion, shredded cheese, and avocado.

4. Add salsa and/or Greek yogurt on top. Serve immediately.
