Tomato Basil Soup
Ingredients:
• 2 tbsp olive oil
• 1 onion, chopped
• 2 cloves garlic, minced
• 4 cups fresh tomatoes, chopped (or 2 cans of whole tomatoes)
• 2 cups vegetable broth
• 1/2 cup fresh basil leaves
• 1 tsp sugar (optional)
• Salt and pepper to taste
• 1/4 cup heavy cream or coconut milk (optional, for a creamy version)
Instructions:
1. Heat the olive oil in a large pot over medium heat. Add the onion and garlic, and sauté until soft and fragrant, about 5 minutes.
2. Add the tomatoes and vegetable broth. Bring to a boil, then reduce heat and simmer for 20-25 minutes.
3. Add the fresh basil leaves and use an immersion blender to blend the soup until smooth (or transfer to a blender in batches).
4. Season with salt, pepper, and sugar if desired. Stir in the heavy cream or coconut milk, if using.
5. Serve hot, garnished with additional basil leaves if desired.
