Chopped Salad With Pecans

Nutrient-rich quinoa combined with roasted seasonal vegetables, fresh herbs, and a tangy lemon vinaigrette dressing.

 

Ingredients:

- 4 cups mixed greens (romaine, spinach, arugula)

- 1 cup strawberries, Sliced

- 1/2 cup cucumber, diced

- 1/4 cup red onion, thinly sliced

- 1/2 cup pecans, toasted

- 1/4 cup feta cheese, crumbled (optional)

- 1 Handful of Snow peas, sliced

Dressing:

- 1/4 cup olive oil

- 2 tbsp balsamic vinegar

- 1 tsp Dijon mustard

- 1 tsp honey

- Salt and pepper to taste

Instructions:

1. In a large bowl, combine the mixed greens, strawberries, cucumber, red onion, and snow peas.

2. In a small bowl, whisk together the olive oil, balsamic vinegar, Dijon mustard, honey, salt, and pepper.

3. Pour the dressing over the salad and toss to combine.

4. Top with toasted pecans and feta cheese, if using. Serve immediately.
